Mermaids in the Kitchen: Turkey and White Bean Chili

Yay! We are so excited around here; It seems you heard our call for recipes, because we’d had several submissions of delicious dishes! This week, we have a chili that sounds so good, it’ll make you miss those colder months. We’re pretty sure it’s fabulous any time of year, though! The recipe is Turkey and White Bean Chili from Kathleen; here’s what she had to say:

Mermaids in the Kitchen: Layered Spinach Salad

The Mermaids are all a buzz around here today! Our very first Mermaids in the Kitchen Recipe submission has arrived! That’s right; today, we are sharing a recipe sure to knock your socks off from one of our wonderful guests.

Lori Cumberledge, from Maryland, has shared her Layered Spinach Salad with us, and the picture has us drooling! Lori’s salad is extra special, too. It was published in the Taste of Home Cookbook back in 1997! This recipe looks heavenly, and Lori says it is the perfect choice for any summer cook out. Mermaids in the Kitchen: Recipe Call!

Look outside…I don’t know about you, but I think spring is on the way! Tybee Island is gorgeous in any season, but spring is special, and summer? Well, summer is even better!

Spring and summer mean warmer weather, flip flops, beach towels…and cook outs! Picnics and cookouts are usually some of Mermaid Cottages’ favorite memories. There’s just something about food that brings family and friends together like nothing else can. It’s with that in mind that we ask for your help!

Shrimp and grits is a favorite around here!

Here at Mermaid Cottages, we’ve added a new feature to our blog. Mermaids in the Kitchen is meant for sharing recipes with our Mermaid Nation; there’s just one problem. We need some fresh recipes to share! That is where you come in. We would love for all you Mermaid Cottages fans near and far to help us in the kitchen!

Do you have a fabulous recipe you just love returning to time and time again? Is your potato salad the life of the party? Do you have a beach inspired meal that your family can’t get enough of? A cocktail that makes you wish it was happy hour all day long? We’d love to hear about it! Please send us your recipes!

We’re looking for recipes to share, and the beachier, the better!  Winter, spring, summer, or fall, we’d love to hear what you prepare to make your family and friends smile. If you have a recipe you’d like to share, please send your recipe and information to us at diane@mermaidcottages.com.  Please feel free to share any stories about your recipe. The Fish Camp Cocktail Winner!!!

We had so much fun this weekend! Saturday was the big recipe judging for the Fish Camp Cottage Cocktail Contest, and we definitely had our work cut out for us. There were plenty of cocktails, plenty of friends, and these…

were just the basics for all the recipe fun! We received so many wonderful recipes, but in the end we narrowed the field to eight finalists. And they were…

So, Saturday evening, we got to mixing and shaking and made all the recipes. Just looks like a party doesn’t it?! We had a ball, and after much debate, we had a winner! Kimberly’s Fish Tale cocktail recipe is our new Official Fish Camp Cottage Cocktail!

We settled on the Fish Tale because, well…it’s delicious! But it wasn’t just the taste because all the recipes were scrumptious! It was amazing because it can be made ahead and placed in the freezer, where it will be ready and waiting for you when you return from the beach! Best of all, it uses Georgia peaches for a great local flavor.
Thanks to everyone that entered the contest and shared all these wonderful recipes and congratulations to Kimberly! We sure hope you enjoy your 3 day/2 night stay at Fish Camp Cottage as much as we enjoyed your recipe!

Cottage Cocktails a Plenty!

Holy cow, we are so excited to see how many of you have submitted recipes to the Fish Camp Cottage Cocktail Contest!!  We have six more recipes to share this week! It is going to be very difficult to narrow these down and pick a winner.

Tuscan Breeze
from Roni
Fresh mint leaves
Fresh strawberries
Vanilla vodka
Ginger Ale
-Muddle the mint and strawberries in the bottom of a high ball glass.
-Add a shot of vanilla vodka, then top off the glass with Ginger Ale.
Blueberry Turtle
from Carolyn
Smirnoff Blueberry Vodka
Pineapple juice
Fresh Mint
-Add pineapple juice, crushed ice, and fresh mint to a metal shaker.
-Shake until it gets nice and frosty on the outside…Shaking your Groove Thang is a plus too!
-Pour in tall glasses with a mint leaf and a flamingo straw!
Skip and Go Naked
from Laura
12 oz frozen pink lemonade made from concentrate
12 oz vodka
6 lite beers
-Mix and serve over ice.
Fish Tale Cocktail
from Kimberly
1 6oz can frozen pink lemonade
6 oz vodka
4 peach halves, no syrup
13 ice cubes
-Blend all ingredients in a blender and freeze.
-Serve slush style with 7 Up or Sprite!
Pink Bikini
from Theresa
1 (1.75 liter) bottle raspberry lemonade (Simply Lemonade)
1 3/4 cups coconut rum
1 cup Amaretto Liqueur
-Combine lemonade, rum, and amaretto in a large pitcher.
-Stir well and serve over ice.
Lemon Drop Martini
from Jen
juice of 6 lemons
4 TBsp sugar
6 fresh mint leaves
4 shots vodka
-Mix lemon juice, sugar, and vodka in a shaker with ice.
-Shake well and pour into sugar rimmed glass and garnish with fresh mint.
