The first several times I made this I went strictly by the recipe and everyone I served it to just raved about it. Now, when I have an abundance of tomatoes or squash, I just leave out the potatoes and go with the fresh ingredients from my garden. Last night, I even used a can of green salsa under the onions and the salsa gave it an extra kick that my guests loved!
