This week’s Mermaids In The Kitchen is a recipe for a Summer Vegetable Bake we found on Pinterest! It’s super easy, fun, versatile and a wonderful comfort food dish to have on hand!
The first several times I made this I went strictly by the recipe and everyone I served it to just raved about it. Now, when I have an abundance of tomatoes or squash, I just leave out the potatoes and go with the fresh ingredients from my garden.
