The Neiman Marcus Cookie Receipe- Urban Myth or not- you be the judge!

I’m in the process of getting not only my homes, but the other Mermaid Cottages ready for the holidays. Besides the decorating of the homes, this also includes starting to get ready for the holiday baking. This is one heck of a cookie to make but also has an interesting story behind it….. Part of the Internet landscape- Urban Myths- be it the dog from Mexico that turns out to be a rat or now this great story about the $250 recipe for cookies- they make life interesting! Everything I’ve found on the Internet says this is a good old fashioned urban myth- but no matter- this is an un believeable cookie recipe! Try it and see what you think! Yum is what I say!!!

NEIMAN-MARCUS COOKIES (Recipe may be halved)

2 cups butter

24 oz. Chocolate chips

4 cups flour

2 cups brown sugar

2 tsp. Baking Soda

1 tsp. Salt

2 cups sugar

1 – 8 oz. Hershey Bar (grated)

5 cups blended oatmeal

4 eggs

2 tsp. Baking powder

2 tsp. Vanilla

3 cups chopped nuts (your choice)

Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips , Hershey bar, and nuts. Roll into balls, and place two inches apart on a greased cookie sheet. Bake for 10 minutes at 375 degrees.
Makes 112 cookies

Fish Camp cottage- the getaway of Southern Super Stars!

We keep telling everyone that the “slow season” is the best time to come and visit us. Slow to us means the crowds are gone, though we still have alot of visitors, but the restaurants and shops are open, there just aren’t any long waits to be served or shop. The weather is just gorgeous- alittle chilly, but still beach walkable weather for sure!
Tom Sullivan, host of Atlanta and Company , the very popular morning TV show was here enjoying Fish Camp Cottage with his best friend and dog Parker. We were very lucky to have such a well known celebrity from the big city of Atlanta come and enjoy one of our cottages! Tom checked out on Sunday and Monday our next celebrity to arrive at Fish Camp Cottage was the NY Times Best selling author, Mary Kay Andrews! There is no rest for writers, she just finished her last book – The Fixer Upper – and she’s starting her new book this week. The book will be set in Savannah and where better to begin then Savannah’s Beach- Tybee! Then if that wasn’t all – We had a celebrity from Macon, GA here visiting us- staying at” A Mermaid’s Tale ” Cottage. Terrell Sandefur, Macon’s own favorite son was here doing business in Savannah and we were honored he stayed with us. Pumpkin Maple Rum Cupcakes for Thanksgiving….

Look at this great idea for Thanksgiving! Pumpkin Pie may be a tradition, but in the world of Cupcakes lovers, how do you resist! They just sound like Thanksgiving!
Pumpkin Cupcake Recipe makes 12 cupcakes
1 1/2 C flour
1 t cinnamon
1/2 t ginger
1/2 t nutmeg
1/2 t allspice
1 t baking soda
1/2 t salt
1 1/2 C sugar
3/4 C pumpkin puree
2 large eggs
1/2 C vegetable oil
1/4 C dark rum
1/4 C maple syrup
Whisk together flour, spices, baking soda, and salt.
In a large bowl, combine the sugar, pumpkin, and eggs. Beat until smooth.
Mix in the oil, rum, and maple syrup.
Slowly add the flour mixture and mix until fully incorporated.
Fill cupcake liners 3/4 full.
Bake at 350 F for 20-25 minutes.

Try either ( or both!) of these receipes for frosting.

Apple Butter Frosting Recipe
1/4 C apple butter
1/4 C butter
3/4 C brown sugar
2 T milk
2 t cinnamon
1 C sifted powdered sugar
In a saucepan, melt the butter.
Add the apple butter and brown sugar.
Bring to a boil and lower the heat to medium low.
Continue to boil for 2 minutes, stirring constantly.
Add the milk and the cinnamon and bring to a boil, still stirring constantly.
Cool to lukewarm.
Gradually add the powdered sugar and beat until thick enough to spread.
OR try :

 

Cinnamon Cream Cheese Frosting

 

8 oz cream cheese, room temperature
1/4 C (half stick) butter, room temperature
1 t vanilla extract or vanilla bean paste
2 t cinnamon (add more to taste)
2-3 C powdered sugar (add more or less to make it a stiffness that you like)
Mix cream cheese and butter well.
Add vanilla and cinnamon.
Add powdered sugar.
